Ever hear of Chayote Squash?

I purchase a fruit and veggi basket each week. I love getting them because we eat more healthy food throughout the week and we get a better variety than if I just went to the store. I received a squash this week that I hadn't tried before, have you ever seen this?
After a quick google search, I found out it is called Chayote Squash. Then came the search on how to prepare it. It is very popular in the Asain and European Culture, and it seems like everyone cooks it differently. I decided to just lightly saute it in olive oil, I through in a little garlic, salt and pepper, a splash of red wine vinegar and barely sprinkled some sugar over it. It came out as a crunchy sweet side dish. My youngest two ate it like it was candy and kept asking for more all night. My husband and I enjoy spicy food so we topped ours with some red pepper flakes which make it spectacular!
I would say it was a huge success, with one exception. My middle child saw the red pepper flakes sitting on the counter and decided, "those sprinkles look so yummy!" You guessed it, he grabbed them and hid in the other room and decided to indulge in what he thought was a treat. Minutes, if not seconds, later he came running in the kitchen saying his mouth and lips were on fire! I felt so bad and washed the flakes off him and got him a cup of milk. However, I had to laugh since this has been a huge battle with him. He is constantly sneaking stuff out of the kitchen and eating it. Do you think he learned his lesson? Probably not, only time will tell.....

  1. Found you via A Taste of T. My parents cook Chayote. Guess what? We're Asian (Filipino). My dad mostly puts it in soups so it's basically boiled and soft. I may have to try it as a crunchy slightly sweet side dish so my boys will eat it.
